How To Make Cheesy Enchiladas
My family has always taught us, throughout our lives to make the best recipes. This is one of my family's secret recipe. This recipe is unique because it has a white creamy sauce instead of red or green sauce. You will love it!
It's made with a creamy white sauce with lots of cheese and chicken in it. Unlike I have seen or tasted before. Now I'm going to share one of many with you.
What ingredients you need:
6-8 piece of boneless chicken breasts
2 cans of cream of chicken soup
8 oz of sour cream
Shredded sharp cheese but you can use mild if you want.
Diced green chilies (as many as you want) I use 2 cans of the small size or one large one.
Glass casserole dish
How to prepare it step by step:
Boil the chicken beasts in a pot with water until done. (Don't dump out the water just yet.)
Cut or dice the chicken into small pieces.
After or during this time you need to make the creamy white sauce. Add all the ingredients from above. Cream of chicken soup, sour cream, and diced chilies.
Mix it in a large bowl. It will be thick so you want to add the boiled chicken water to thin it out. This is basically eyeballing it or until your desired thickness. (Now don't make it too thin.)
I find it easier to add the dice chicken into the sauce but you don't have to.
On low heat in the microwave, put in the tortillas for a little bit.
Now get the casserole dish and take one tortilla and lay it down and out a spoon full of the sauce and layer of cheese and roll it up.
Keep doing this until the dish is full.
Finally add the rest of the sauce, which you should have a lot left over, to the top of them. Make sure to cover the entire dish and tortillas. Then add as much cheese as you want to cover the top of it as well.
Put in the oven at 350° until it's hot in the center. You don't have to have it cooked just have the cheese melted and it hot throughout the entire dish because everything is already cooked.
